This week we have decided to review the 6 trends in global flavour (or flavor for the Americans) according to the prestigious McCormick Flavor Forecast.
McCormick is a US company which manufactures spices, herbs and flavourings for retail, commercial and industrial markets. Since the year 2000 experts from the company have been releasing an annual report on Us trends in flavour matching, but this year they have gone global and have decided to bring in chefs, sensory scientists, trend trackers, marketing experts and food technologists from all over the world to help them release this year's Flavor Forecast.
Readers should be warned that it will not be very easy to find these dishes on any of our restaurants, no matter how trendy, simply because the forecast isn't intended to be a reflection of how we eat today, but a forecast of 3 to 5 years in the future. The flavour combinations proposed are also rather unusual, but, hopefully, both professional and amateur chefs may draw some inspiration from them.
